Traditional British recipes have come back into fashion in recent years – especially if the dishes are made with locally sourced food and seasonal produce. You’re likely to find old fashioned favourites on the menu in fashionable gastro-pubs and in restaurants serving modern British cuisine. Often these dishes will have been given a contemporary twist – using less fat, perhaps.

A number of dishes take time to prepare – soups and stews, for instance, need slow cooking for all the flavours to be released.
